Oh She Glows Every Day Recipe Review: High Rise Pumpkin Cupcakes and Spiced Buttercream #baking #writing

img_2322I know what you’re thinking: “Anita, that isn’t a picture of cupcakes. You do know what cupcakes are, don’t you?” Allow me to explain…

I baked this cake for my lovely sister’s birthday which we celebrated a couple of weekends ago. The recipe hails from my latest culinary obsession, Oh She Glows Every Day, the newest cook book from Angela Liddon. Funny story: my sis and I both bought each other this cook book for Christmas! We had a good laugh about that. ;-)

I’ve committed to trying out new recipes every week, especially for Sunday dinner. So far, I’ve tried recipes for Roasted Garlic Basil Pesto Potatoes with Arugula (brought this to a potluck and it was a crowd-pleaser), Shepherd’s pie with Cozy Gravy (the ultimate winter comfort dish), Metabolism-Revving Spicy Cabbage Soup (very tasty), Comforting Red Lentil and Chickpea Curry…and this cake!

In the cook book, this recipe is called “High Rise Pumpkin Cupcakes” but I divided the batter into two cake pans instead. The recipe called for spelt flour and raw cane sugar, but I didn’t have any on hand, so I used all-purpose and brown sugar. Hey, you do what you gotta do, right bakers?img_2324

Wow, what a delicious cake! For a pumpkin cake, it isn’t overly moist or dense. The spice blend gives it a pleasant warmth for this chilly time of year. The buttercream is the best I’ve ever tried, vegan or otherwise, and it compliments the cake perfectly. I cannot wait to bake this up again.

The cake went over well at the party and I was delighted to tell people: “It’s vegan!” (Apart from the handmade truffles that I added on top and the whipped cream I served on the side. No regrets.)

    1. It was a funny coincidence! Honestly, I’ve never used a cookbook more than this one. I rave about it so much at work people ask, “So, Anita, what have made this week?” Ha ha!
