I know what you’re thinking: “Anita, that isn’t a picture of cupcakes. You do know what cupcakes are, don’t you?” Allow me to explain…
I baked this cake for my lovely sister’s birthday which we celebrated a couple of weekends ago. The recipe hails from my latest culinary obsession, Oh She Glows Every Day, the newest cook book from Angela Liddon. Funny story: my sis and I both bought each other this cook book for Christmas! We had a good laugh about that. ;-)
I’ve committed to trying out new recipes every week, especially for Sunday dinner. So far, I’ve tried recipes for Roasted Garlic Basil Pesto Potatoes with Arugula (brought this to a potluck and it was a crowd-pleaser), Shepherd’s pie with Cozy Gravy (the ultimate winter comfort dish), Metabolism-Revving Spicy Cabbage Soup (very tasty), Comforting Red Lentil and Chickpea Curry…and this cake!
In the cook book, this recipe is called “High Rise Pumpkin Cupcakes” but I divided the batter into two cake pans instead. The recipe called for spelt flour and raw cane sugar, but I didn’t have any on hand, so I used all-purpose and brown sugar. Hey, you do what you gotta do, right bakers?
Wow, what a delicious cake! For a pumpkin cake, it isn’t overly moist or dense. The spice blend gives it a pleasant warmth for this chilly time of year. The buttercream is the best I’ve ever tried, vegan or otherwise, and it compliments the cake perfectly. I cannot wait to bake this up again.
The cake went over well at the party and I was delighted to tell people: “It’s vegan!” (Apart from the handmade truffles that I added on top and the whipped cream I served on the side. No regrets.)
If you want to keep it vegan, you can easily make vegan truffles and Angela Liddon’s recipe for Coconut Whipped Cream (http://ohsheglows.com/2012/08/30/coconut-whipped-cream-a-step-by-step-photo-tutorial/).
All I can say is try these recipes! And thanks “Oh She Glows Everyday” for another tasty dessert. Do yourself a favour and pick up a copy of this book! For more vegan cooking inspiration, check out the Oh She Glows Blog: http://ohsheglows.com/.
See you soon,
Anita :-) xo
PS. Did you notice the new artwork on the blog?! HUGE thanks to the one and only DR.T. for honoring this blog with his original work. All I can say is, “Damn, Daniel!” You’re super talented.
Yes, I really like the new artwork! And the cake too!
Thank so much! I’m really proud of the art and pleasantly surprised by the cake! :-)
The new artwork is lovely. I particularly like the cat!
I’m incredibly impressed that beautiful cake is vegan :-)
Ha ha, the cat is my fave part too! :-) Thank you for your sweet comment about the cake. I keep raving about the cook book. I don’t think I’ve ever used one as much as it. It’s been a lot of fun working my way through it. This blog might turn into an Oh She Glows tribute site!
Love the artwork, and lovely to see you :) x
I love that you and your sister gifted each other the same book! Talk about being on the same wavelength!!
Hi Elaine! Oh thanks so much, I’ll pass on the compliment to D. The xmas gift exchange was quite funny. I think she was motivated to get it for me because I kept her other Oh She Glows cook book for so long, ha ha!! :-) xo
Now this cake/cupcakes really sounds like a winner to me :-) I definitely trust your judgement Anita, so I really must look into buying this book.! x
Thanks so much, Lynne! You’re so into healthy cooking/eating that I could see you getting a lot out of it. I wonder if you’ll be able to find it in the bookstores over there? I hope you’re well! :-) xo
All good thanks Anita. Hope you are well too. Lets hope ! Will check out some bookstores here. x
It was best cake I have ever eaten :) xo
Aw, now that makes it all worth it! Glad you liked it! XO :-) People love that we got each other the same book, ha ha!
I love that you and your sister gifted each other with the same book❣️
Hi! It’s quite funny, isn’t it? It certainly saves my sister from me stealing her cook books for too long, as is my habit! Thanks for dropping by! :-)
That cake looks soooo good!
Thank you!! It was very tasty. I kind of wish I had some now, even though it’s still morning. ;-)
Haha, I love that you and your sister gave each other the same book! I bet she loved that you made her cake from it. I am going to have to check this book out for sure. I love the artwork! I hope you are having a wonderful 2017 Anita!
It was a funny coincidence! Honestly, I’ve never used a cookbook more than this one. I rave about it so much at work people ask, “So, Anita, what have made this week?” Ha ha! My blog is in serious danger of turning into an Oh She Glows tribute blog. ;-) Thanks so much for your sweet comment about the artwork. M husband is an illustrator/animator and I’m always so pleased when he draws me something. The new year has been good busy so far, thanks! I hope yours is going great too!!
You are funny! It sounds like a great cookbook, I can’t wait to check it out! Thank you, it has been nice, but busy too :D
