Gluten-free Oatmeal Chocolate Chip Cookies

Happy May 2-4, everybody!

Canadians get pretty excited about this long weekend, which technically is to celebrate Queen Victoria’s birthday, but that most of us see as the kick-off to summer – patio, outdoor concerts, beaches, camping, barbecues, cottaging! (I could go on, ha ha.) It’s as if all of our pent-up cabin fever gets released in three days. (Maybe it’s just me.) The weather this weekend is supposed to be sunny and warm too. Sigh, I’m so happy!

Another reason for my hyperactivity is that I recently finished the novella I’ve been working on all year – like today! So, I’m definitely in a festive mood.

I’m thrilled to spread the joy with these vegan Gluten-free Oatmeal Chocolate Chip Cookies. I’ve been meaning to adding gluten-free recipes to the blog for a while now, so hopefully this will be the first of many. I’ll be making a triple batch of these for my nephew’s birthday bash next weekend. He tried them for the first time a couple of weeks ago and loved them. Hey, if an almost eight-year-old approves a gluten-free cookie, it’s got to be good.

I got the recipe from a cookbook that I am in love with called OH SHE GLOWS. (Here’s a link to Angela Liddon’s blog: http://ohsheglows.com.) The recipe below is slightly modified from the original, based on the ingredients I had available at the time.

Over the spring and summer, I hope to post a series based on the recipes from the cookbook. If you’re looking for a solid vegan/vegetarian cookbook, I highly recommend picking up this one. Ha ha, funny story. I actually bought a copy for my sister last Christmas and borrowed it…I’ve kept it for too long and now I’m not sure I’ll give it back. (Just kidding, NK! ;-) )

Gluten-free Oatmeal Chocolate Chip Cookies

Makes a dozen

Ingredients:

1 Tbsp ground flax

1/4 c Earth Balance

1/4 c all-natural peanut butter (Or almond butter, which is what she uses in the cookbook.)

3/4 c brown sugar

1 tsp vanilla

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp fine-grain sea salt

1 1/2 c gluten-free oats, blended into flour (FYI: Oats are naturally gluten-free, however, many oats are processed in the same facilities as wheat etc, and so become contaminated. If you have a sensitivity, buying so-called GF oats assures that the oats have been processed in a GF facility.)

1/4 c chocolate chips

Directions:

  1. Preheat oven to 350 degrees and very lightly grease a baking sheet or line with parchment.
  2. In a small bowl, combine flax with 3 Tbsp water and leave to soak.
  3. Using a blender, pulse the oats into flour and set aside.
  4. Using a stand mixer, beat Earth balance and peanut butter until smooth. Add sugar until combined. Add vanilla and flax.
  5. One at a time, beat in baking soda, baking powder, salt and oat flour. The dough should be a little sticky. Fold in the chocolate chips.
  6. Roll into 1-inch balls and place on baking sheet a couple of cms apart.
  7. Bake for 12-15 minutes, until golden on the bottom. Let cool on the baking sheet for 5 minutes and then transfer to a cooling rack. The cookies will be soft when they come out but will harden as they cool. Enjoy!

  1. Ooo lovely! I think I’ve only ever managed to make 2 things which were gluten free. And managing to make a gluten-free cookie which earns the approval of an eight year old is even more impressive :-)

    1. Thank you!! I’ve been reluctant to try GF baking, especially with cakes, but this was a great recipe to start with. I honestly think this is my new go-to recipe for oatmeal cookies now. Thank you about the novella, it feels really good to have a solid draft. Now I just have to muster the courage to submit it! Ha ha. ;-) I’m so looking forward to not writing this weekend!

    Now my friend, these chocolate chip cookies sound AMAZING !!! I am so excited to try them. I too, need to up my game in the GF department and bake more GF things. I have not seen Earth Balance here, so will have to substitute that…but yay! I am so happy for this recipe. I’m quite happy with the novella and the timing has been great because this is about all the writing I’ve done so far all weekend, haha! :-) I’m sooo glad that you like the recipe. I guess this officially starts my homage to “Oh She Glows,” haha. Honestly, this is my go-to for oatmeal chocolate chip cookies, it’s that good. I always appreciate an eggless recipe for those times when I just don’t have any in the house. We’ve all been there, right? ;-) Since you don’t have Earth Balance, I think using any other vegan butter or maybe even margarine would be okay.       1. Absolutely I will let you know and thanks will try find a vegan butter alternatively will use margarine. Nothing wrong with going the eggless route and oh yes, there are many a time I don’t have an egg in the house haha,

      2. Hi Lynne! I hope you had a good weekend. Happy Monday to you. :-) I’m a little excited this morning because I get the day off, ha ha. The weather has been so warm and sunny, it gives me an extra jolt too. Well, now that the novella is finished, I’ve let my publisher know, and hopefully I’ll be able to submit it to them this week. I’ve got a week until their submission deadline, so I’ve just made it, phew. ;-) After that, I’ll be focusing on applying for a grant, and once that’s done I’ll be revising a manuscript based on some feedback I got recently. Definitely a lot of revisions going on lately! For sure, writing really is all about commitment, but I waited so long to be able to dedicate myself to it that I feel blessed to pursue it now. Some days though, it’s hard to face the page, ha ha. There are a few things in my life that bring me inner joy and writing is one of them. Is it the same for you? I know on your blog you mention how you’ve always wanted to write and that desire motivated you to start your blog. Very cool!! Thanks so much for asking and I hope the cookies work out! xo :-)
