Today I’m sharing with you the dessert that I made for Christmas. What I love about this recipe is that everyone gets their own little cake to feast on. Also, since the portions are smaller, they end up being the perfect sweet finish to follow a sumptuous holiday dinner. The chocolate cakes are drizzled with Irish Cream while they are still warm. When you are ready to eat, simply top with a generous scoop of vanilla ice cream, some dried cranberries and white chocolate chips.

Ingredients:
1/4 cup unsalted butter, melted
1/3 cup white sugar
2 eggs
1 tsp vanilla extract
3 Tbsp unsweetened cocoa powder
1/4 cup all-purpose flour
1/4 tsp baking powder
1/4 tsp salt
Topping:
A few Tbsp of Irish Cream
Dried cranberries
White chocolate chips
Vanilla ice cream
Directions:
1.Preheat oven to 400 degrees. Grease 4 oven-safe ramekins and place on baking sheet. Set aside.
2. Using a stand mixer, whisk butter and sugar. Add one egg at a time. Add vanilla extract.
3. To the wet ingredients, add the cocoa, baking powder, salt and flour. Using a spatula to fold in the flour careful not to over-mix.
4. Bake for about 15 minutes or until your cake tester comes out clean.
5. Allow to cool for 10 to 15 minutes. When the cakes are still warm, drizzle with Irish Cream. When you are ready to serve, top with a scoop of ice cream, dried cranberries and white chocolate. This would be lovely served with an Irish coffee too. Enjoy!
