Today I took a break from my revisions to partake in some fall baking. I have to admit, the oppressive Ottawa humidity kept me away from my oven for most of the summer. (That and the insanity of my writing mentorship!) But with the advent of cooler temperatures and the delights of the harvest, I find the baker in me awakening after a hibernation of sorts.
I have to thank my little nephew for inspiring today’s recipe. The other day, he shared with me some golden delicious apples he had picked himself. Crisp and sweet and all the more delectable because they came from him. One of said apples found its way into this recipe for Healthy Apple Oatmeal Cookies. They have the texture of a cake cookie, with reduced fat, and a not-too-sweet taste.

Apple Oatmeal Cookies
1/4 c softened butter
1/4 c mashed banana
3/4 brown sugar
1 tsp vanilla
1/2 c all-purpose flour
1/2 c whole wheat flour
1 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
1 c quick oats
1 c chopped walnuts (optional)
1 cup apple (your choice), peeled and chopped
1. Preheat oven to 350 degrees. Set ungreased baking sheet aside.
2. Cream together butter and banana until smooth. Add brown sugar. Add eggs and vanilla.
3. In a separate bowl, combine flours, cinnamon, baking powder, salt.
4. Fold the dry ingredients into the wet. Fold in the oats, walnuts and apple.
5. Spoon onto the baking sheet, two inches apart. Bake for 12-15 minutes. Let cool on wire rack. Enjoy!
